lately

Random thoughts sorry I haven't made time to write anything interesting or upload any pictures.

  • I'm having a love/ hate relationship with packing right now.  I love getting organized, downsizing, finding random letters or photos or bits of my life and taking little strolls down memory lane.  I hate trying to anticipate what I might need and what I should just leave in storage for another few years. 
  • Ivy has started CRAWLING and it's so cute!  I think she's even more content than she already was (although today she was quite fussy and I think those top teeth are looming).  I think I need to write a separate post all about her and her milestones.  She's almost 10 months which is almost 12 months.  Whoa- where did a year go?!
  • John and I had a fun weekend away while Asher and Ivy stayed with Nana and Grandpa.  We went to the bay area and loved seeing some wonderful friends.  We also missed seeing some other wonderful friends.  I miss my friends.
  • We still don't know the exact date we're moving- frustrating.
  • It is really cold and keeps snowing here.
  • LOST is on tonight!
  • Question for you crockpot gurus: It seems to be hit or miss with me and crockpot pork roast.  If the goal is moist "pulled" ie. stringy, pork, you know, the Cafe Rio variety.  What do I need to do?  Sometimes, it works like a charm and "just falls apart" and other times, like tonight, it's tough and I spend lots of physical effort pulling it apart to make it looks stringy, but still taste a little tough.  I can't figure out what I did differently today than the last time when it was delish!
  • I'm voting for Romney.
  • My blog banner needs some help.  It ended up that way after some experimentation with digital scrapbooking and I haven't re-visited that stuff since.  sorry.
  • I just got my mind going with a to- do list(you know the kind where your mind keeps going even though your body is ready to sleep) and I have decided to spare you and NOT continue typing stream of thought.- Good night!

  1. hey, toria. this blog is cute. was lost good? i have yet to watch it off our DVR. can't wait. anyway, i wanted to mention about your crockpot question. the only way i've made cafe rio type pork is like this recipe: http://jasonandjacque.blogspot.com/2007/11/your-in-home-cafe-rio.html don't know if that helps... but it always turns out yummy.

    I didn't know you could digital scrap!!? I learn something new about you all the time! LOL!
    My moms coming down at the end of Feb or March she wants to see your mom.
    SO maybe we'll get to gether and do lunch - it would be nice if you could come down again before you move. I'm sorry we missed you this last time.

  4. Toria and John! So fun to see your blog and get an update on where you guys are. Your kids are darling and I'm diggin the hair color. :) Dubai sounds like so much fun!! We will be in the Maldives (off coast of Sri Lanka)in April...sorta close to where you will be. Glad to see things are going well! Best of luck in thw packing process...yuck! :)

  5. I'm not sure on your pork issue. Typically if it is tought it just hasn't cooked long enough or there isn't enough water. I usually throw a frozen pork roast in the crock pot in the morning. I put it on high for an hour or two and then low for the rest of the day. If the roast is thawed then I just put it on low all day.

    We miss you guys! Hope the packing goes well. I might have to call you for over-seas moving tips in a year or so if things go well this summer in Europe.
    I can add it to the list of things I always want to ask you about. You are such a pro at so many things. I need to pick your brain more often!

  8. Pork Roast - Low and slow. The longer you can cook it at a lower temperature the better it will be. What makes the meat fall apart is the sustained heat over a long period of time breaks down the connective tissue in the meat. Cooking it at a low temperature ensures that the moisture doesn't just cook away. (Thank you Alton Brown). But sometimes it does just depend on the cut of meat.

  9. Toria! I can't believe you guys are moving away ... out of the country!! It's like the trend lately. Even though I'm horrible at keeping in touch, I hope you keep up the blog so we can see your adventures!
    Do you remember Greg Giles? I was actually poking around tonight and found his family blog. Super cute family. And then his roommate I dated for a bit, Allan. Weird (but cute family as well).
    Your family is so adorable! Seriously, you could lose yourself just looking at Ivy...
